Scallion Pancakes

3 Cups Flour
1 Cup Water
1/4 Cup chopped green onions
1 Tbsp melted shortening

(makes approximately nine 5" pancakes)

In a bowl or dough mixer, combine flour and water. As dough
forms, add onions and melted shortening. Knead dough for 2
minutes. Roll out on floured surface 1/4" thick and cut out 5"
circles (a large coffee can is what I use).

If you do not want to cook them right away you may freeze
them between pieces of waxed paper stored in an air tight plastic
bag. Freezing is actually a better way to do this because they are
much easier to handle when they are frozen. Otherwise they stick
together.

To prepare, take the almost thawed, raw pancakes and place in
1/4" to 1/2" hot vegetable oil. You will know it is hot enough when
you see bubbles around the edges. Cook 3-4 minutes each side
until brown and toasty. Drain on paper towels for 1-2 minutes
then cut up with a large knife (or pizza cutter) in to 8 pie shaped
pieces. Serve hot with Peter's Gourmet Sauce in a dipping bowl.
(Especially good with the Hot variety) Be sure to have lots of
napkins and ice cold beer or soda nearby. Enjoy!!

Hint: Because it is a bit of a production to make these, you may
want to make more than you are going to eat that day. Store the
cooked but not cut up pancakes in freezer bags for future use. Take
the frozen pancakes and bring back to life by putting them in a
toaster oven and put on dark toast. Do not microwave. Also, be very
careful if you use a regular toaster, the cooking oil can drip off and
cause a fire. Have a wet towel nearby and immediately unplug the
toaster and wrap up and carry outside. After toasting with a pair of
tongs (they are very hot!) place them on a paper towel and cut up
and serve.
