I think that maranade times have a lot to do with temperature of the meat as it is maranading. Colder meat-longer time.
What I like to do to shorten maranade time and maximize flavor is to take out my cold steak from the fridge, put it a glass pan, generously coat both sides with Peter's "yellow", cover the pan in plastic wrap, and let it come to room temperature before I cook it. Try it! You'll see that the steak will soak up the maranade like a sponge! Very, very tasty!
