I have left marinades on, up to 3 to 7 days depending on how infised i want the flavors, and how think/tough the meat is.

Each day i puncture each side of the meat with 2 forks excessively.

I have never seen this mentioned before in the WWW, but i have to say from personal experiance, it works, very very VERY well.

(Meat thinkness usually in 1 inch or more range)
